how do i get a car over hauled?

My grandfather has a 57 English Ford Thames that he has been fixing it up since before i was born. My grandfather is a very deserving person and i would love to surprise him with his car. if you are familiar with the tv show overhaulin, i would like to try something like that... but unfortunately overhaulin is no longer taking application for cars to be overhauled. my grandfather deserves this more than any man i know. my dad and i would appreciate any information any one can give me thank you.
